Chocolate Iced Raspberry Cookies

Ingredients

Sugar Cookies

  • 1 1/3 cups butter
  • 1 1/2 cups sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3 tbs milk
  • 4 cups flower
  • 3 tsp baking powder
  • 1/2 tsp salt

Royal Icing

  • 8 cups powdered sugar (1 bag)
  • 1/2 cup cocoa powder
  • 1/2 cup meringue powder
  • 1 tbs vanilla
  • 1 cup warm water

Instructions

Cookies

  1. Mix butter, sugar, and vanilla until combined.

  2. Add in eggs and beat until light and fluffy.

  3. Mix in flour, baking powder and salt, alternating with the milk, until dough forms.

  4. Divide dough in half. Wrap each half in plastic wrap and place in the fridge for at least an hour.

  5. Roll out dough, cut out shapes and place on cookie tray.

  6. Bake at 375 degrees for 6 minutes. (Or until crunch satisfaction level is achieved.)

Royal Icing

  1. Mix the powdered sugar, cocoa powder, and meringue powder in a medium bowl until combined.

  2. Add half the water to the dry ingredients and mix. Add water little by little until the icing is the consistency of thick frosting for outlining.

  3. Once you're done outlining your cookies add the rest of the water and mix until light and fluffy to be used for filling in the outlined cookies.

Cookie Construction

  1. Place baked cookies on parchment paper for decorating.

  2. Outline the cookies with the thick frosting.

  3. Once the outlined frosting is hard, fill them in with the thinner frosting. 

  4. Add raspberries while the frosting is still hardening. Note: If you just washed them, make sure they are completely dry. If they're damp when you put them on the cookie it will keep the frosting under them from hardening.

  5. Place in the fridge until the frosting has hardened.

Story Time

The inspiration to make this dessert came from an unlikely place…the back of a woman’s sweater who was sitting four pews ahead of me in mass! That’s right, straight up divine intervention right there! At the time, I was actually praying about this blog. Should I start it? Would I stick with it? Would anyone even bother to read it? That’s when I looked at the woman ahead of me (who was paying better attention to the homily than me obviously) and saw a design on her sweater that looked like a chocolate frosted heart with raspberries on it. The idea stuck with me and after some Pinterest searching it seemed like I had come upon a unique idea. At least one that hadn’t been pinned enough to come up in any of my searches.

So off to the drawing board I went! I poured over cookie and royal icing recipes until I decided on what lies above. I can’t say they’re the best in the world, but I also wouldn’t say they were the worst. Heck, they’re the first I’ve made of either so from my minuscule knowledge I’d say they turned out pretty darn good! Watch out for the royal icing though, it makes a butt ton! So you might want to think about doubling your cookie recipe or have another idea lined up because I sadly threw a lot of it away in the end.
