These pumpkin bars were a fall staple in my house growing up. For someone who isn’t a big pumpkin fan, these bars are amazing! I think the cream cheese frosting is what really puts it over the top.

Preheat oven to 350°.
In a large bowl, beat the bar ingredients until combined.
Pour into a greased jellyroll pan.
Bake for 25 minutes.
While the bars are baking, combine all of the frosting ingredients in a large bowl and beat until fluffy.
Wait to frost the bars until they're completely cooled.
I’ll be honest with you, it wasn’t until I had kids that I appreciated the amazingness of a Kitchen Aid mixer. Before kids, I used nothing but a spoon or my handheld mixer. I felt like it gave me more control of the mixing, plus I didn’t have the counter space in my small apartment for a Kitchen Aid. Once you have a little munchkin running around, you realize how beneficial it is to not have to pause your mixing while attending to them for a minute.
Before frosting the bars, make sure you let it cool down completely. If you frost it while it’s warm, the icing will become runny and the top is more likely to flake off into the frosting.
