Mix the flour, sugar, baking powder, baking soda and salt together.
Add in eggs, buttermilk and butter. If you don't have buttermilk you can use a substitute of heavy cream and lemon. (For this, mix one cup of heavy cream and one tablespoon of lemon juice in a small bowl.)
Stir all ingredients together by hand until combined. Once complete, stir in raisins.
Grease two (9 in.) loaf pans or one large pan.
Bake at 350 degrees for 45 minutes in two pans, or for one hour in one large pan.
I can take no credit for this one, it was all my sister Mary! During her spring break this year she flew out for a visit, cleaned my place and baked!! Don’t you all wish you had a sister like this? And what’s baking without a dance party? My siblings sure do have some pretty sweet moves…
Growing up, I can’t recall a Lenten season when our mom didn’t make this. I’m not sure what made this the perfect recipe for Lent but I’m assuming it had something to do with its lack of chocolate.
If you aren’t a fan of raisins you can certainly make this without them, however I find that they add the perfect hint of sweetness to such a dense bread.
And is it even possible to make something like this without having a stick of butter nearby? No.
So bake, dance and enjoy!
