Pumpkin Cake

Ingredients

Cake

  • 1 box Pillsbury Moist Supreme Perfectly Pumpkin Cake Mix
  • 1 cup flour
  • 1 cup sugar
  • 1 dash salt
  • 3 eggs
  • 1 cup water
  • 1 cup sour cream
  • 1 tbsp vanilla

Cream Cheese Frosting

  • 6 bars of cream cheese (8 oz), softened
  • 1 stick butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla

Pumpkin Chocolates

  • 1 bag orange candy melts
  • 1 bag green candy melts
  • 1 bag white candy melts
  • Handful of chocolate chips.
  • 1 silicone mold

Instructions

Cake

  • Mix all of the dry ingredients in one bowl and wet ingredients in another.
  • Slowly add the mixed dry ingredients to your wet ingredients until all is combined.
  • Follow baking instructions on back of cake box. (My oven is off by an outrageous amount so I can't honestly say what temperature I was at and for how long.)

Frosting

  • Combine all of the frosting ingredients in a large bowl and beat until fluffy.

Pumpkin Chocolates

  • Follow the instructions on the bag and melt your chocolates into different bowls.
  • To get different shades of orange and green, add some of the white chocolate to them in a separate bowl.
  • Place each color into individual piping bags.
  • Pipe the chocolate into the molds and pop out once they've hardened.
  • I used toothpicks to hold up the chocolates that sat on top of the cake.

I was recently scrolling through old photos on my phone when I came across this cake. The shock on my face when I realized I had made this s’mores inspired bonfire cake THREE YEARS AGO! How did I let so much time go by without posting it?? I had at least posted a video of it on TikTok back then. That counts for something, right?

Well, I wasn’t about to let another fall go by without sharing this s’mores cake! I was inspired after coming across a pin from Life, Love and Sugar on Pinterest. If you prefer to make your cake by hand, I suggest you take a look at her recipe. I need more experience making my own cake batter. Until then, I enjoy my doctored up box mix. She also uses a marshmallow frosting which would go perfectly with this s’mores bonfire cake. I was making several cakes at once that day so it was easier to go with my standard buttercream frosting for all.

Since this cake was made three years ago, I don’t remember the exact measurements used to make the chocolate ganache. If you head over to Sally’s Baking Addiction, she’ll give you great instructions for making this.

The next time I make a dessert, I’ll make sure to post it much sooner. Or at least write down the recipe!

S'mores Bonfire Cake

Ingredients

Cake

  • 1 box Betty Crocker Super Moist Triple Chocolate Fudge Cake Mix
  • 1 cup flour
  • 1 cup sugar
  • 1 dash salt
  • 3 eggs
  • 1 cup water
  • 1 cup sour cream
  • 1 tbsp vanilla

Filling

  • 1/2 bag chocolate chips
  • 1 cup heavy cream

Vanilla Buttercream Icing

  • 3 sticks butter (room temperature)
  • 5 cups powdered sugar
  • 1 splash vanilla extract

Toppings

  • Graham Crackers
  • Marshmallows

Instructions

Cake

  • Mix all of the dry ingredients in one bowl and wet ingredients in another.
  • Slowly add the mixed dry ingredients to your wet ingredients until all is combined.
  • Follow baking instructions on back of cake box. (My oven is off by an outrageous amount so I can't honestly say what temperature I was at and for how long.)

Vanilla Buttercream Icing

  • Beat the butter until whipped.
  • Slowly add in the powdered sugar until all is combined.
  • Add the vanilla extract.
  • You can keep adding powdered sugar until you reach your desired consistency. If it's too thick, add a tablespoon of milk.

Chocolate Ganache

  • Sally's Baking Recipes describe perfectly how to create this chocolate covering. https://sallysbakingaddiction.com/chocolate-ganache/

Creating the cake

  • Once the layers have cooled, add a layer of frosting to the top of your first layer and smooth out.
  • Build a wall of icing around the edge of the cake. Make sure this wall is tall and thick enough to hold in your chocolate ganache
  • Add a layer of chocolate ganache and top with the next cake layer.
  • Continue this process for the rest of the layers.
  • Frost the cake and top with chocolate ganache and toasted marshmallows. In a piping bag, add drips of chocolate down the cake. You can add other garnishes such as graham cracker crumbs around the base.

The Best Treat You’ll Make This Fall: Pumpkin Pop Tarts

Already planning out your fall baking? This pumpkin pop tart recipe was something new I tried last year on a whim. It is now my favorite fall treat and can’t wait to make them again this year.

I found these pumpkin pop tarts fairly easy to make but they do require some time set aside.

If you don’t have time to frost them the way I did, no worries! Drizzle the frosting over them and they’ll be just as good! How can you go wrong with pumpkin and frosting??

Pumpkin Pop Tarts

Ingredients

Pop Tarts

  • 1 pkg Pillsbury pie crusts
  • 1/2 cup pumpkin puree
  • 1/3 cup brown sugar
  • 1 tbs maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp pumpkin pie spice
  • dash of salt

Icing

  • 1 cup powdered sugar
  • 1 tbs butter
  • 1 tbs milk
  • 3 tbs white shimmer sugar

Instructions

Pop Tarts

  • Place the two pie crusts flat on top of each other.
  • With a pumpkin cookie cutter, cut out pumpkin shapes from the dough, separate the layers and lie down the cutouts on a piece of parchment paper.
  • Once you've cut out as many as you can, ball up the extra scraps of dough and roll it flat so that you can cut out a few more.
  • In a medium size bowl, whisk together all of the other ingredients.
  • Take half of the dough cutouts and place them down on a large cookie tray.
  • Spoon a dollop of the pumpkin mixture in the center of them and smooth out, leaving some room on the edges.
  • Dip your finger in water and run it over the exposed edges of the dough to help the top layer stick to it.
  • Before you put the top layer on, use a knife to cut three rounded slits in the dough to give it a pumpkin shaped look.
  • Place the top layer of dough over the bottom and press the edges of the dough together. If a little pie filling comes out, that's ok.
  • With a fork, go over the edges again, pressing down to create a stamped look.
  • Put the pop tarts in the oven at 350° for 20 minutes or until the crust is golden brown.

Icing

  • Wait until the pop tarts are completely cooled before icing them.
  • Mix everything except the shimmer sugar together and add the frosting into a piping bag or a sandwich bag with an edge snipped off.
  • Frost the edges, stem and center of the pop tart. You can take a toothpick to move the frosting around and fill in any gaps.
  • Finish by sprinkling the shimmer sugar over the frosting. Best to do right after the pop tart has been frosted so the sugar will stick to it.

This easy sugar cinnamon pretzel recipe is perfect if you need to throw together something quickly for a party or if you’re in charge of bringing the team snacks this week.

A lot of my siblings were in track and cross country. Several times a year, this recipe was made in large batches and brought out to the track.

You can either keep the sugar cinnamon pretzels in one large bag for everyone to share and divide them up into smaller sandwich bags for individual use.

If you want to add an extra kick of fall to this recipe, stir in a tsp of pumpkin spice.

Sugar Cinnamon Pretzels

Ingredients

  • 1 pkg mini pretzels (15-18 oz)
  • 2/3 cup oil
  • 1/2 cup sugar
  • 2 tsps cinnamon

Instructions

  • Stir oil, sugar and cinnamon in a large pot over medium heat.
  • Add pretzels and stir for 5 to 10 minutes until the bottom of the pan is dry.
  • Pour the pretzels onto a cookie tray or in a large Tupperware bowl, covered with aluminum foil to cool.
  • After the pretzels cool, pour into a large or individual sized ziplock bags.

Spice Up Your Fall with a Delicious Caramel Apple Cake

Caramel apples are one of the first things that come to mind when I think of fall. If this sugary treat is a favorite of yours as well, you’ll love this caramel apple spice cake!

Fall is absolutely my favorite season of the year, and with that, comes a lot of baking! There are so many flavors and dishes that play into the warmth and coziness of the season that I find it hard to not spend all day in the kitchen. I wanted to put together a few fall themed cakes this year and caramel apple was a must!

I love my boxed cake mixes but have recently been looking for a way to doctor them up a bit. I read that you can get them to taste like bakery cakes if you switch it up just a bit, like adding sour cream?? It sounded weird to me but the results were amazing! I used Midget Momma’s boxed mix hack for this recipe and I will definitely be using it again!

Whether you’re celebrating a special occasion or simply embracing the spirit of autumn, this caramel apple cake will undoubtedly leave a lasting impression on your guests. So dust off your baking tools, put on your apron, and get ready to spice up your fall with a slice of heaven.

Caramel Apple Spice Cake

Ingredients

Cake

  • 1 box Betty Crocker Super Moist Butter Pecan Cake Mix
  • 1 cup flour
  • 1 cup sugar
  • 1 dash salt
  • 3 eggs
  • 1 cup water
  • 1 cup sour cream
  • 1 tbsp vanilla

Filling

  • 1 can apple pie filling

Vanilla Buttercream Icing

  • 3 sticks butter (room temp)
  • 5 cups powdered sugar
  • 1 splash vanilla extract

Caramel Sauce

  • The recipe I used is from Baked By An Introvert. The link to that post is below this recipe.

Instructions

Cake

  • Mix all of the dry ingredients in one bowl and wet ingredients in another.
  • Slowly add the mixed dry ingredients to your wet ingredients until all is combined.
  • Follow baking instructions on back of cake box. (My oven is off by an outrageous amount so I can't honestly say what temperature I was at and for how long.)

Vanilla Buttercream Icing

  • Beat the butter until whipped.
  • Slowly add in the powdered sugar until all is combined.
  • Add the vanilla extract.
  • You can keep adding powdered sugar until you reach your desired consistency. If it's too thick, add a tablespoon of milk.

Creating the Cake

  • Once the layers have cooled, add a layer of frosting to the top of your first layer and smooth out.
  • Build a wall of icing around the edge of the cake. Make sure this wall is tall and thick enough to hold in your apple pie filling.
  • Add a layer of apple pie filling, drizzle with caramel sauce and top with the next cake layer.
  • Continue this process for the rest of the layers.
  • Frost the rest of the cake and then add caramel sauce to the top, letting it run down the cake. You can add other garnishes such as apple slices to the top.
